Monster Cookies

“Me want cookie!”  Who doesn’t love a good cookie?  How about a good oatmeal cookie? Or a peanut butter cookie? Maybe one with chocolate chips? Butterscotch chips? Peanut butter-filled chocolate chips? Mini M&Ms?? How about ALL OF THE ABOVE?! Yes!!  These cookies are loaded and perfectly suited to satisfy the cookie monster in anyone.  You don’t like oatmeal/peanut butter/chocolate chips/M&Ms—fine, go bake some sugar cookies and leave the flavor fun to us (though I do have a sugar cookie recipe that makes amazing shape cookies that I will just *have* to share at some point—I even have some fun and geeky cookie cutters).  Here we go—monster cookie goodness awaits!


3 eggs
1-1/4 cup packed brown sugar
1 cup sugar
½ teaspoon salt
½ teaspoon vanilla    
12 ounces creamy peanut butter
1 stick butter, softened 
2 teaspoons baking soda                                    
4-1/2 cups quick cooking oats
½ cup M&Ms (I like minis)        
½ cup chocolate chips (or butterscotch, or white, or all of the above)

Preheat the oven to 350 degrees and prepare a cookie sheet by lining it with parchment paper or use a silicone baking mat. 

Mix the eggs and sugars.

Add salt, vanilla, peanut butter, butter and mix well.

Stir in M&Ms, chocolate chips, baking soda and oats.

Place by scoopful onto prepared baking sheet and cook in preheated oven for 8-10 minutes depending on size, mine definitely took 10 minutes. 

Let cool on cookie sheet for a few minutes before transferring to a wire rack.  Store in a sealed container.  Enjoy!!
